Spice Up Your Life (Santa Fe Chicken Crockpot Recipe)

santa fe chicken in a bowlWe feed six people a day for breakfast, lunch, dinner and snacks since we homeschool and everyone works from home. Since we cook so often, we try to make enough food for dinner to eat leftovers for lunch and we also try to have some simple meals. When we find a good deal on boneless skinless breasts at either Zaycon foods or at our local Thrifty produce and meat store, this is one of the meals we like to fix. There is nothing to it, you just mix all of the ingredients in the crock pot except for the cream cheese which is added the last hour of cooking. We then cook some rice to complete the meal. You can also serve with homemade bread or wrapped up in a tortilla. This is a favorite at our house for both taste and convenience. From our kitchen to yours..enjoy!

(15 ounce) can black beans, rinsed and drained
2 (15 1/4 ounce) cans whole kernel corn, drained
1 cup bottled thick & chunky salsa
5 -6 boneless skinless chicken breasts
1 (8 ounce) package cream cheese
1 cup shredded cheddar cheese

Directions

In crock pot, mix together beans, corn, and 1/2 cup salsa.
Top with the chicken breast, then pour the remaining salsa over the chicken.
Cover and cook on high 2 1/2 to 3 hours, or until chicken is tender.
Remove the chicken and cut into bite size pieces.
Put back into the crock pot.
Add the cream cheese (cut into cubes to melt faster), and turn to high.
Heat until cream cheese melts, and blends into sauce.
Serve over rice.
Top with shredded cheese.
