Need A Little Sweetness In Your Life? Banana Split Cake Recipe

WP_20150717_0001Every Friday morning begins with talk of what we going to have as the main dish and dessert for our splurge meal. We are health nut enthusiasts on many levels. You can find us adults exercising to Leslie Sansone walking DVDs every morning bright and early and the teenagers often go for walks in the afternoon and use dance exercise DVDs upstairs. We often eat tomato, cucumber, and onion salad and we love to fry squash and okra in Olive oil and corn starch. We also enjoy sitting around talking about our day, eating frozen yogurt made from frozen fruit in our Yonanas Froyo maker in the late afternoon. So when Friday night dinner comes around we are giddy with excitement and ready to indulge so that we do not feel deprived and can remain motivated with our diet and exercise the rest of the week.

This weekend we made a scrumptious dessert that was one of my Nana’s favorites when she was alive. So Nana, this one is for you. Now keep in mind this is a very rich dessert so a little goes a long way and since it high calorie it would be best to serve on special occasions. We hope that this will be a recipe that you will choose to share with your family and that your memories will make memories just as sweet as ours. Please enjoy from our kitchen to yours.

Banana Split Cake
1 (16 ounce)
package vanilla wafers crushed
1 cup of margarine, melted
1 (20 ounce) can crushed pineapple, drained
6 bananas
1 (8 ounce) package cream cheese
2 cups confectioners’ sugar
1 (12 ounce) container froze whipped topping, thawed
1/4 cup chopped walnuts (we used almonds)
8 maraschino cherries
chocolate syrup (just enough to drizzle on top)

1. Combine the crushed vanilla wafers and melted margarine. Pat into the bottom of one 9 x 13 inch pan.
2. Beat the cream cheese and confectioners’ sugar together until light and fluffy. Spread over the top of the vanilla wafer crust. Spoon crushed pineapple over the cream cheese layer. Then layer sliced bananas over the pineapple . cover with the non-dairy whipped topping and sprinkle top with chopped walnuts ( or nuts of your choice) and maraschino cherries.
3. Chill for at least 4 hours before serving
