(Chocolate No Bake Cookie Recipe)

no bake cookies 1Since tonight my hubby is coming home, I decided to write about something sweet that all of our family enjoys. We have used this recipe for many years in our family. We love to make these around Christmas time and package in holiday tins to hand out to neighbors, employees at the gym, and we always save some to put out on Christmas eve for all of our out of town family to enjoy. This is not a recipe that we make all the time although there are so few ingredients that when we have a craving, we are able to make with very little planning. This is something that whole family can make together, you just have to watch out for little hands not wanting to leave them be to set and dry. To me they taste more candy than cookies but our family absolutely adores them. Have a sweet tooth, want to do something fun with the kids? Give this recipe a try..from our kitchen to yours!
Yield 24 cookies 12 cup butter or 12 cup margarine
  1. Add the first four ingredients into a 4-quart sauce pan.
  2. Bring to a rolling boil and hold for 1 minute.
  3. Remove from heat.
  4. Add peanut butter into the hot mixture and stir until melted.
  5. Add in vanilla. (almond extract is good also, but I only use 1/2 teaspoon almond and 1 1/2 teaspoon vanilla).
  6. Mix in the oats and drop by tablespoons onto wax paper.
  7. Let cool until set.
    I have found that if the weather is rainy they do not come out as well for me.no bake cookies 2
